Pie in the Sky was established as an offshoot of one of Cape Town’s oldest operating bakery’s, Coimbra Bakery (circa 1966). Started by Mario Luiz and Joao Martins in 1991, the business supplied predominantly Pies to clients around the Cape Town metro area.
Over the past 3 decades, Pie in the Sky has continued to innovate, develop new lines and grow to establish itself as a leading FSA and Halaal accredited bakery in the Cape area and nationally.
2013 marked a pivotal year in the business as the company expanded deeper into the Cape hospitality market through supply into Cape Town international airport, of which it still does today, serving most international airliners. Together with this, the original bakery was expanded and upgraded with new facilities and machinery with the assistance of the Department of Trade and Industry (DTI). With second generational family in the fray, the bakery expanded further over the next decade, including a move to a new 3000m² facility in Montague Gardens in 2019. This very exciting growth path was unfortunately quickly brought to a halt with the onset of the Covid-19 outbreak in March 2020 and subsequent lockdowns leading to the bakery losing 90% of its client base in a matter of days! In the initial months of the pandemic, the bakery continued to supply NGO’s and in doing so donated over 100,000 rolls over 2020 and 2021 through the dedication of our employees and generous support of our donors. In addition to this our staff labelled sanitising bottles and got involved in preparing meals for students returning to varsity campuses. This very interesting time is well documented in a brief video, highlighting the bakery’s Knead and Rise campaign to assist in raising funds.
The pandemic was also a chance for the bakery to revisit its strategy and pivot more into the robust retail sector and beyond the borders of Cape Town. Over the course of 2020 and 2021, Pie in the Sky managed to secure wonderful opportunities in national retailers, Food Lovers Market, Spar and Checkers. We are proud to share that our products are also not only available in Cape Town, but also in Joburg, Pretoria and Durban through various distribution partnerships.

Still family owned, the growth over the years has been solidly grounded in Pie in the Sky’s core values of Innovation and Continuous improvement; Consistent Quality; Tolerance for Diversity; Opportunities for Growth and Respect for the Individual. The bakery’s colourful and exciting history over the last 50 years certainly has set the foundation for years to come. Watch this space!
